Cooking Light night....take two....

The meal.....homemade chicken nuggets, homemade mac and cheese and steak fries...yummy!

We had our second rendition of our cooking light nights....except it was deceptively delicious night. Well, my bubs hates broccoli and Mel found a great recipe that called for puree broccoli in the coating of the chicken nuggets and it was ohhhhhhh so good! Then we had home made mac and cheese from the same cookbook, it was supposed to have pureed butternut squash but yeah, it didn't turn out so well, we kinda over cooked the squash, oh well! Then we made rice krispie treats with flaxseed and brown rice krispies....no not chocolate....lol. They were soooo good too! Bubs loved the chicken nuggets, we told him our tricky plan after he professed his love for them and he said he knew there was broccoli in it, he saw the green but he couldn't taste it so it was good!
While Mel and I were making dinner Dan was playing with Suishi in his room, they were dressing his bear and turtle.....so cute!
Once again Mel has waaaay better pics than me, their camera is soooo much better than mine and we just tend to use theirs!! Thursday night we went to see Trishy and Brian and had us a survivor night and made shrimp fly rie, egg rooos, crab ragoo.....lol....it was allll very good, pics to follow.

*disclaimer----the steak fries were not home made, they were hy-vee made, we decided it was ok to have one item non-homemade....besides they are FABULOUUUS!

That doesn't sound all that light! I have this cookbook that has you sneak healthy vege purees into things....I made the nuggets with sweet potato puree....I don't think I'll repeat those again!

Looks delicious! I am intrigued by the chicken nuggets coated with pureed broccoli... you guys will have to start posting your recipes. ;)
